Inizia setacciando la farina di mandorle, il cacao amaro e le proteine in polvere in una ciotola grande per eliminare eventuali grumi.

In un'altra ciotola, monta gli albumi con il pizzico di sale fino a ottenere una consistenza spumosa. Aggiungi lentamente l'eritritolo, continuando a montare fino a formare una meringa lucida e con picchi fermi.
