Method

In una ciotola, mescolare le mandorle tritate con l'eritritolo e la cannella, quindi mettere da parte.

In un'altra ciotola, idratare la gelatina in polvere con 50ml di acqua fredda e aggiungere le spezie: zenzero, noce moscata e chiodi di garofano. Lasciare riposare per 5 minuti.

Scaldare i restanti 50ml di acqua in un pentolino e sciogliere la gelatina a fuoco lento. Far raffreddare leggermente.

Montare gli albumi a neve ferma, aggiungendo lentamente l'eritritolo fino a ottenere un composto lucido e stabile.

Incorporare delicatamente la gelatina tiepida nel composto di albumi con movimenti dal basso verso l'alto.

Versare il composto in uno stampo rivestito di carta forno e livellare la superficie.

Lasciare riposare a temperatura ambiente per almeno 2 ore fino a solidificazione.

Una volta solidificati, sformare i marshmallow e passarli nel mix di mandorle ed eritritolo.
