Scaldare il forno a 200°C. Posizionare la sfoglia sul piano di lavoro e tagliarla a strisce larghe 2,5 cm e lunghe circa 20 cm: otterrai 12 strisce.

Arrotolare delicatamente ogni striscia intorno a un cono per cannoncini leggermente oliato, facendo aderire bene la pasta. Disporre i coni in una teglia rivestita di carta forno.

Infornare per 16-18 minuti a 200°C fino a doramento leggero e croccantezza. Togliere dal forno, lasciar raffreddare alcuni minuti, quindi estrarre i coni in alluminio con delicatezza.

Nel frattempo, trasferire la ricotta in una ciotola, aggiungere il parmigiano grattugiato, il pepe e il sale. Mescolare con una forchetta fino a ottenere una consistenza omogenea e cremosa.

Trasferire la mousse di ricotta in una sac à poche (o un sacchetto per congelatore con l'angolo tagliato) e riempire il centro di ciascun involtino croccante.

Tagliare lo speck in strisce fini, arrotolarle su se stesse e sistemarle sopra la mousse in gruppetti decorativi.

Completare con un pizzico di microgreens freschi e un filo di olio extravergine. Servire a temperatura ambiente.
