Preriscalda il forno a 130°C. Rivesti due placche con carta da forno.

In una ciotola pulita e asciutta, versa gli albumi e il sale. Monta a neve ferma con le fruste elettriche per circa 8-10 minuti, fino a ottenere picchi rigidi e bianchi.

Aggiungi lo zucchero di canna poco alla volta, continuando a montare per altri 2 minuti, finché la meringa non diventa liscia e lucida.

Incorpora delicatamente l'estratto di vaniglia con una spatola.

Trasferisci la meringa in una tasca da pasticceria con beccuccio rotondo (diametro 1 cm).

Forma sui piani dei cerchi di circa 4 cm, proseguendo a spirale verso l'alto per creare la forma di un fantasmino. Mantieni una distanza di almeno 5 cm tra uno e l'altro.
