Versare l'acqua tiepida in una ciotola, aggiungere il lievito sbriciolato e il miele, mescolare finché il lievito non si dissolve completamente.

Unire le due farine, il sale e l'olio: impastare con le mani per 8-10 minuti fino a ottenere un impasto liscio e elastico.

Formare una palla, porla in una ciotola leggermente unta, coprire con un canovaccio umido e far lievitare in luogo tiepido per 90 minuti (l'impasto deve raddoppiare).

Dividere l'impasto in due porzioni uguali. Con un mattarello, stendere ciascuna in un rettangolo sottile (circa 5 mm).

Spalmare leggermente ogni sfoglia con la ricotta, distribuire le fette di pollo affumicato, le olive tagliate a metà, la cipolla e il pecorino grattugiato. Cospargere con pepe nero.

Arrotolare strettamente dal lato più lungo verso di sé, formando un cilindro compatto.

Con un coltello ben affilato, tagliare il cilindro in dischi da 5-6 cm.

Posizionare i dischi su una placca rivestita di carta forno, distanziandoli leggermente. Lasciar riposare 15 minuti coperto.

Preriscaldare il forno a 210°C.

Infornare per 22-25 minuti finché le mignolate non sono dorate in superficie e croccanti ai bordi.

Estrarre dal forno, lasciare intiepidire per 3-5 minuti e servire tiepide.
