In un pentolino, portare a ebollizione il brodo vegetale.

Aggiungere le lenticchie rosse, la carota, la cipolla e il sedano tritati insieme all'origano secco; cuocere a fuoco medio-basso per circa 15 minuti, fino a quando le lenticchie sono tenere.

Incorporare gli spinaci freschi, la passata di pomodoro, le olive nere, l'aceto di vino rosso, l'aglio tritato, sale e pepe; cuocere per altri 3 minuti, finché gli spinaci non si appassiscono.
