Iniziare preparando la base: tritare finemente le mandorle e le albicocche secche, poi mescolare con l'olio di cocco e l'eritritolo fino a ottenere un composto omogeneo. Compattare il mix in una piccola tortiera monoporzione e riporre in frigorifero per 15 minuti.

Per la mousse, frullare il tofu con lo yogurt greco, le pesche fresche, il succo di limone, la vaniglia e l'agar agar fino a ottenere una crema liscia.

Versare la mousse sulla base di mandorle e albicocche e riporre in frigorifero per almeno 2 ore.

Preparare la glassa: cuocere i lamponi con l'eritritolo e un cucchiaio d'acqua a fuoco lento per 5 minuti, mescolando fino a ottenere una consistenza sciropposa.
