Preriscaldare il forno a 180°C e inserire i pirottini di carta in una teglia per muffin.

Pulire i funghi con carta umida, affettarli sottilmente e riservare.

Tritare finemente lo scalogno a mano o con un coltello.

In una padella antiaderente, riscaldare 1 cucchiaio di olio a fuoco medio, aggiungere lo scalogno e rosolare per 2 minuti.

Aggiungere i funghi, sale e pepe, cuocere per 6-7 minuti finché i funghi rilasciano l'umidità e si asciugano leggermente. Trasferire in una ciotola e lasciar raffreddare.

In una terrina capiente, mescolare la ricotta con l'uovo intero e gli albumi fino a ottenere un composto cremoso.

Aggiungere la farina integrale, il Parmigiano, il lievito, sale e pepe, mescolare con delicatezza.
