Preriscalda il forno a 200°C. Prepara uno stampo per muffin monoporzione (o piccola ciotola resistente al calore rivestita di carta forno).

In una ciotola, mescola 40g di fiocchi d'avena, 30g di farina di mandorle, 1g di eritritolo, 0,5g di cannella, 0,5g di lievito, un pizzico di sale.

In un'altra ciotola, sbatti 1 uovo grande con 60ml di latte scremato, 5ml di olio EVO, 5ml di composta di mele non zuccherata e 2ml di estratto di vaniglia.

Incorpora delicatamente il composto umido in quello secco fino a ottenere un impasto omogeneo.

Aggiungi 60g di mela fresca tritata finemente.

Versa il composto nello stampo riempiendo per 2/3, cospargi con un mescuglio di 5g fiocchi d'avena + 0,5g cannella + 2ml olio EVO. Cuoci per 15 minuti fino a quando uno stecchino inserito al centro esce pulito.
