Inizia scaldando 60 ml di acqua tiepida e aggiungi 1/2 cucchiaino di eritritolo e 1/2 cucchiaino di lievito di birra; lascia riposare per 5 minuti fino a formazione di schiuma.

In una ciotola, mescola 40 g di farina integrale, 30 g di proteine in polvere, 1/4 cucchiaino di sale e 1/4 cucchiaino di lievito per dolci.

Unisci il composto di lievito nella miscela secca, quindi aggiungi 60 g di yogurt greco 0% e 5 ml di olio di semi; impasta per 2-3 minuti fino a ottenere un impasto omogeneo.

Metti l'impasto in una ciotola leggermente unta, copri con un canovaccio e lascia lievitare per 30 minuti in un luogo caldo.

Riscalda il forno a 220°C, posizionando una teglia in metallo o una pietra refrattaria per 10 minuti.
