Sciogliere il lievito in 50 ml di acqua tiepida con lo zucchero e lasciare riposare 5 minuti.

In una grande ciotola mescolare le tre farine, il sale e i semi di lino.

Aggiungere il composto di lievito e l'olio extravergine, quindi versare gradualmente il resto dell'acqua (300 ml) mentre si impasta.

Lavorare l'impasto su un piano leggermente infarinato per 8-10 minuti finché non risulta liscio e elastico.

Formare una palla compatta e trasferirla in una ciotola leggermente unta di olio, coprire con un canovaccio umido.

Lasciare lievitare a temperatura ambiente per 2 ore e 30 minuti, finché il volume non raddoppia.

Preriscaldare il forno a 220°C con una teglia su uno dei ripiani inferiori.

Trasferire l'impasto su carta forno, formare una pagnotta a cupola, cospargere con semi di girasole e fare due-tre incisioni diagonali con un coltello affilato.

Trasferire la pagnotta sulla teglia calda (aiutandosi con la carta forno) e cuocere a 220°C per 15 minuti.

Abbassare la temperatura a 200°C e proseguire per altri 15 minuti finché la crosta è dorata.
