In una ciotola tiepida, sciogliere il lievito di birra fresco nell'acqua tiepida con il miele, attendere 5 minuti fino a ottenere una miscela spumosa.

In una terrina capiente, mescolare le farine di farro, grano saraceno e ceci con i semi di girasole e lino, il sale.

Versare il composto di acqua e lievito sulla miscela di farine e impastare con le mani per 8-10 minuti fino a ottenere un impasto elastico e omogeneo.

Aggiungere l'olio extravergine di oliva e continuare a lavorare l'impasto per altri 2-3 minuti.

Trasferire l'impasto in una terrina leggermente oliata, coprire con un canovaccio umido e lasciare lievitare per 90 minuti in luogo tiepido protetto da correnti d'aria, fino al raddoppio del volume.

Preriscaldare il forno a 190°C.

Trasferire delicatamente l'impasto lievitato su una teglia rivestita di carta forno, modellarlo leggermente con le mani e spennellare la superficie con poca acqua.

Cuocere per 40-45 minuti a 190°C fino a ottenere una crosta dorata e croccante.

Far raffreddare su una gratella per almeno 15 minuti prima di affettare e servire.
