Method

Cuocere a vapore 40 g di patate per circa 15 minuti, quindi schiacciarle in una ciotola.

Scaldare 50 ml di latte di mandorla fino a renderlo tiepido, aggiungere 1 g di lievito secco e 1 cucchiaino di stevia, mescolare e lasciare riposare per 10 minuti.

Unire le patate schiacciate al composto di latte e lievito.

Aggiungere 30 g di farina integrale, 30 g di yogurt greco, 1 albume, 1 cucchiaio di semi di lino macinati, 1 cucchiaino di olio d'oliva e un pizzico di sale. Mescolare bene fino ad ottenere un impasto omogeneo.

Versare l'impasto in una piccola teglia rivestita di carta forno, livellare con una spatola e lasciare lievitare per 15 minuti.

Cuocere in forno preriscaldato a 180°C per 25 minuti, fino a doratura.
