In una ciotola capiente, mescola la farina 00, la farina di semola integrale, lo zucchero di canna e il sale fino.

In un'altra ciotola, sciogli il lievito secco nell'acqua tiepida e lascia riposare 5 minuti; aggiungi i 3 albumi d'uovo e l'olio di semi di lino, mescola bene.

Versa il composto liquido nella ciotola con le polveri e impasta energicamente per 8-10 minuti fino a ottenere un impasto morbido e omogeneo.

Trasferisci l'impasto in una ciotola leggermente oliata, copri con pellicola e lascia lievitare a temperatura ambiente per 1 ora fino al raddoppio.

Sgonfia delicatamente l'impasto sul piano di lavoro e dividilo in 4 porzioni uguali.

Stira ogni porzione con le mani in una corda di circa 30 cm, quindi intreccia le 4 corde formando un treccia a 4 fili.

Posiziona la treccia su una teglia rivestita di carta forno, pennellala con il tuorlo d'uovo sbattuto e cospargi con i semi di sesamo e papavero.

Copri con pellicola e lascia lievitare ancora 45 minuti fino quasi al raddoppio.

Preriscalda il forno a 200°C per 10 minuti.

Inforna la treccia per 18-20 minuti fino a dorata; la crosta deve essere croccante e il colore dorato intenso.

Estrai dal forno e lascia raffreddare completamente prima di affettare.
