Method

Versare l'acqua tiepida in una ciotola grande e sciogliervi il lievito con il miele, lasciando riposare 5 minuti finché non compaiono le prime bollicine.

Aggiungere l'olio extravergine e mescolare bene.

In una ciotola a parte, setacciare la farina integrale, la farina di ceci, le proteine in polvere e il sale.

Versare gli ingredienti secchi nel composto liquido e impastare con le mani per 8-10 minuti fino a ottenere un impasto liscio ed elastico; aggiungere i semi di lino negli ultimi minuti.

Porre l'impasto in una ciotola leggermente unta, coprire con un canovaccio umido e lasciare lievitare in luogo tiepido e riparato per 90 minuti fino al raddoppio del volume.

Scaricare delicatamente l'impasto su un piano di lavoro, modellarlo a forma di pagnotta e trasferirlo in una pirofila rivestita di carta forno.

Coprire con il canovaccio e lasciare lievitare per altri 30 minuti.

Preriscaldare il forno a 200°C.

Incidere la superficie del pane con un coltello affilato, spruzzare leggermente con acqua e infornare.

Cuocere per 35-40 minuti fino a che la crosta diventi dorata e croccante; il pane deve suonare vuoto quando picchiettato sotto.

Estrarre dal forno e far raffreddare completamente su una gratella prima di affettare.
