Method

In una pentola capiente versare l'acqua fredda e aggiungere la farina di ceci, mescolando bene per evitare grumi.

Accendere il fuoco a calore medio-alto e aggiungere il succo di limone, il sale e il pepe.

Cuocere per 18-20 minuti, mescolando costantemente con una spatola di legno fino a quando il composto non si stacca dalle pareti della pentola e diventa denso e cremoso.

Togliere dal fuoco e aggiungere il protein powder, il prezzemolo tritato fresco e il timolo secco, amalgamando perfettamente.

Versare il composto ancora caldo su una teglia rettangolare (20x30 cm) rivestita di carta forno, distribuzione uniforme con il dorso di un cucchiaio bagnato.

Lasciar raffreddare a temperatura ambiente per 30 minuti, poi trasferire in frigorifero per almeno 2 ore fino a completo indurimento.

Estrarre dall'impasto dalla teglia e tagliare in strisce larghe 4 cm, poi in quadrati di 4x4 cm.

Disporre le panelle su una teglia rivestita di carta forno, spruzzare leggermente con olio di oliva spray da entrambi i lati e cospargere con paprica dolce.

Infornare a 200°C per 15-18 minuti fino a doratura croccante, girandole a metà cottura.

Estrarre dal forno, lasciar raffreddare per 2 minuti e servire calde.
