Method

Scalda il latte scremato a 37°C. Sciolvi il lievito di birra nel latte tiepido e lascia riposare 5 minuti.

In una ciotola mescola la farina integrale con il curry in polvere e il sale. Versa il latte con lievito e impasta per 8 minuti fino a ottenere un impasto omogeneo.

Aggiungi la ricotta magra ammorbidita e l'olio extravergine d'oliva, continua a impastare per altri 3 minuti fino a incorporare bene.

Trasferisci l'impasto su un piano infarinato e lavora per altri 2 minuti per sviluppare il glutine.

Dividi l'impasto in 8 porzioni uguali, forma 8 palline lisce e disponile su una placca forno rivestita di carta con distanza di 3-4 cm l'una dall'altra.

Effettua due piccoli tagli paralleli sulla superficie di ogni panino e spolverizza leggermente con farina integrale.

Copri con un canovaccio pulito e lascia lievitare in forno spento per 1 ora, fino al raddoppio del volume.

Togli i panini dal forno, rimuovi il canovaccio e lascia lievitare altri 20 minuti a temperatura ambiente.

Preriscalda il forno a 180°C e cuoci i panini per 18-20 minuti fino alla doratura leggera.

Estrai la placca dal forno e lascia raffreddare completamente prima di servire.
