Method

Scalda il latte a 37°C, aggiungi il lievito secco e mescola fino a scioglierlo completamente; lascia riposare 5 minuti.

In una ciotola, versa la farina integrale, aggiungi le uova intere e mescola bene.

Incorpora il latte lievitato alla farina e inizia a impastare a mano o con una planetaria per 8-10 minuti.

Aggiungi la polvere di mandorle, il rosmarino tritato, il sale, il pepe e l'olio: continua ad impastare finché l'impasto non risulti morbido e coeso (altri 5 minuti).

Trasferisci l'impasto in una ciotola leggermente unta, coprilo con un canovaccio umido e lascilo lievitare per 90 minuti in un luogo tiepido, finché non raddoppia.
