Immergere la gelatina in fogli in una ciotola con acqua fredda per 10 minuti fino a ammorbidimento completo.

Scaldare il latte scremato in un pentolino a fuoco medio, aggiungere la ricotta, la whey protein e il miele, mescolando fino a completa dissoluzione (circa 4-5 minuti).

Togliere dal fuoco, aggiungere l'estratto di vaniglia e un pizzico di sale, quindi incorporare la gelatina ammollata e strizzata, mescolando per 1 minuto finché completamente sciolta.

Filtrare il composto attraverso un colino a maglia fine in una ciotola pulita, premendo delicatamente con il dorso di un cucchiaio.

Distribuire il liquido tra 4 vasetti o bicchieri e refrigerare per 2-3 ore fino a completa solidificazione.
