Preriscaldare il forno a 180°C e rivestire una tortiera da 20 cm di carta forno.

In una ciotola, montare gli albumi a neve ferma con un pizzico di sale usando una frusta elettrica (circa 3-4 minuti).

In un'altra ciotola, mescolare la purea di pere con il miele fino a ottenere un composto omogeneo.

Aggiungere il latte di mandorla e amalgamare bene.

In una terza ciotola, setacciare insieme la farina d'avena, le proteine in polvere, il bicarbonato e le spezie.

Unire delicatamente gli ingredienti secchi al composto di pere mescolando con un cucchiaio di legno per non smontare gli albumi.

Incorporare con cura gli albumi montati in due riprese, usando movimenti dal basso verso l'alto.

Versare l'impasto nella tortiera e livellare la superficie.

Cuocere nella parte inferiore del forno per 40-45 minuti fino a quando uno stuzzicadenti inserito al centro esce pulito.

Togliere dal forno e lasciar raffreddare per 10 minuti prima di sformare su una gratella.
