Versare le mandorle crude in un robot da cucina o frullatore potente e tritarle finemente fino a ottenere una farina granulosa (circa 10-12 secondi). Trasferire in una ciotola.

Aggiungere alla farina di mandorle le proteine in polvere, il miele e il sale, mescolando bene con una spatola o cucchiaio di legno.

In una ciotola separata, montare leggermente gli albumi con una forchetta fino a renderli schiumosi.

Incorporare gli albumi montati al composto di mandorle, aggiungendo l'estratto di vaniglia e l'acqua poco a poco, mescolando con movimenti delicati fino a ottenere un impasto omogeneo e modellabile.

Trasferire l'impasto in una ciotola, coperto con pellicola trasparente, e riporlo in frigorifero per almeno 2 ore (il riposo aiuta la stabilità e la coesione).

Riprendere la pasta dal frigo, modellare in piccoli cilindri o dischetti (circa 20 g l'uno) e consumare fredda o a temperatura ambiente.
