Trita finemente mandorle e pistacchio in un robot da cucina fino a ottenere una granella omogenea, circa 2 minuti.

In una ciotola, monta leggermente gli albumi con una forchetta. Aggiungi il miele, l'estratto di mandorla, il sale e la vaniglia.

Incorpora il composto di frutta secca agli albumi mescolando delicatamente con un cucchiaio di legno. Aggiungi la farina d'avena per legare.

Copri l'impasto con pellicola trasparente e lascia riposare in frigorifero per almeno 2 ore, così gli aromi si concentreranno.

Preriscalda il forno a 170°C in modalità ventilata. Rivesti una placca con carta forno.

Preleva piccole porzioni di impasto (circa 15 g ciascuna) e modeliale a forma di S sulla carta forno. Mantieni una distanza di 3 cm tra i biscotti.
