Sciacquare la quinoa sotto acqua corrente in un colino fino a quando l'acqua non risulta chiara.

In una pentola, unire la quinoa e l'acqua, portare a ebollizione. Ridurre il fuoco al minimo, coprire e cuocere per 15 minuti.

Togliere dal fuoco e lasciare riposare, coperto, per altri 5 minuti. La quinoa continuerà a cuocere al vapore.

Nel frattempo, in un pentolino, mescolare l'aceto di riso, l'eritritolo e il sale. Scaldare a fuoco medio finché l'eritritolo non si scioglie completamente, quindi lasciare raffreddare.

Trasferire la quinoa in una ciotola e aggiungere il condimento all'aceto. Mescolare bene fino a quando la quinoa non assorbe il condimento.

Servire la quinoa sushi in ciotole, guarnendo con semi di sesamo.
