Method

Preriscaldare il forno a 200°C. Preparare 4 stampini di silicone da muffin o piccoli pirottini in ceramica e disporli su una teglia da forno.

Tritare finemente i pistacchio con una lama (o mortaio) fino a ottenere una pasta omogenea; se necessario, aggiungere 5 ml di acqua per facilitare il composto.

In una pentolino a bagnomaria, scaldare il cioccolato fondente già tritato insieme al burro chiarificato, mescolando fino a scioglimento completo; togliere dal fuoco e far intiepidire.

In una ciotola, montare i 3 albumi con un pizzico di sale e eritritolo fino a ottenere una meringhe ferma ma non asciutta (2-3 minuti con fruste elettriche).

In un'altra ciotola, mescolare delicatamente i 2 tuorli, la crema di pistacchio, la farina proteica, la vaniglia e il composto di cioccolato.

Incorporare con movimenti gentili un terzo della meringhe nel composto al pistacchio, poi aggiungere il resto piegando con una spatola a movimento lento dal basso verso l'alto.

Distribuire l'impasto negli stampini (riempire per tre quarti) e cuocere in forno a 200°C per 12 minuti: il centro deve rimanere morbido e leggermente tremolante.

Estrarre dal forno, lasciare riposare 2 minuti, quindi sformare delicatamente su piatti freddi.

Guarnire con granella di pistacchio tostato e, a piacere, una spolverata di cacao amaro in polvere.
