Preriscalda il forno a 200°C. Ungi una teglia di 20 cm con un cucchiaio di olio extravergine d'oliva.

In una ciotola, mescola la farina di avena, gli albumi e la mozzarella grattugiata fino a ottenere un composto omogeneo. Stendi l'impasto sulla teglia e inforna per circa 15-20 minuti fino a doratura.

In una padella antiaderente, scalda un cucchiaio di olio e rosola l'aglio schiacciato per 1 minuto.

Aggiungi le zucchine a cubetti e cuoci per 3-4 minuti.

Unisci gli spinaci e il brodo vegetale, cuocendo per altri 5 minuti fino a quando gli spinaci si saranno appassiti.

Sforna la pizza, tagliala a pezzi e servila calda insieme alla minestra di verdure. Aggiungi pepe e peperoncino a piacere.
