Preriscaldare il forno a 180°C. Ungere leggermente una teglia rotonda (22 cm) con 3 g di olio.

In una ciotola, versare la farina di mais, le proteine in polvere, il sale e mescolare bene. Aggiungere l'acqua e mescolare sino a ottenere un impasto omogeneo e senza grumi.

Trasferire l'impasto sulla teglia preparata e stenderlo uniformemente con un cucchiaio umido, livellando bene la superficie.

Cuocere in forno per 35-40 minuti fino a doratura superficiale. Nel frattempo preparare la minestra.

In una pentola, portare il brodo a ebollizione. Aggiungere carote e barbabietole, cuocere per 12 minuti sino a morbidezza.

In un'altra padella antiaderente, scaldare 15 ml di olio e rosolare leggermente i dadini di pancetta per 3 minuti. Aggiungere aglio e peperoncino tritati, cuocere per 1 minuto fino a profumazione.

Unire le zucchine crude al soffritto, mescolare e cuocere per 4-5 minuti a fuoco medio sino a cottura al dente.

Versare il brodo con carote e barbabietole nella padella con le zucchine, mescolare e tenere in caldo.

Estrarre la polenta dal forno e lasciarla intiepidire per 2 minuti. Sbriciolarla con una forchetta direttamente in una ciotola profonda.

Versare la minestra calda sulla polenta sbriciolata, mescolare delicatamente e aggiustare di sale e pepe. Completare con un pizzico di erbe aromatiche fresche.
