Preriscaldare il forno a 180°C e ungere uno stampo da plumcake (22 cm) con olio di cocco, tamponando il fondo con carta forno.

In una ciotola capiente, montare le 3 uova intere con i 2 albumi (circa 2 minuti) finché non diventano spumose e di colore chiaro.

Aggiungere la purea di marroni, l'aceto di mele, il miele e la scorza di limone grattugiata, mescolando delicatamente con una spatola dal basso verso l'alto per mantenere l'aria montata.

In un'altra ciotola, setacciare insieme la farina integrale di castagne, le proteine in polvere, il lievito e il sale.

Incorporare gli ingredienti secchi al composto di uova con movimenti lenti e decisi, fino a ottenere un impasto omogeneo senza grumi.
