Preriscalda il forno a 180°C. Taglia il cavolfiore in piccole cimette e cuoci a vapore per 12 minuti finché risulta tenero ma ancora saldo.

In una ciotola capiente versa il petto di pollo macinato, le nocciole tritate finemente, il pangrattato, le uova, il grana padano, la salsa di soia, l'aglio in polvere, sale e pepe.

Mescola energicamente con le mani fino a ottenere un composto omogeneo e compatto.

Incorpora delicatamente il cavolfiore cotto, mescolando con un cucchiaio per non romperlo eccessivamente: le cimette devono distribuirsi nella massa.

Trasferisci il composto in una placca da forno rivestita di carta oleata e modellalo a forma di polpettone compatto di circa 20x10 cm.

Drizza il cavolfiore rimasto sulla superficie del polpettone, premendo leggermente.

Rosola il polpettone in forno a 180°C per 32-35 minuti finché la superficie è dorata e la carne risulta cotta.

Estrai dal forno e lascia riposare 5 minuti prima di affettare. Servi caldo o a temperatura ambiente.
