Method

Inizia tritando finemente la cipolla e il radicchio. Puoi farlo a mano o con un coltello affilato.

In una padella antiaderente, scalda l'olio extravergine di oliva e fai rosolare la cipolla fino a renderla traslucida. Aggiungi il radicchio e cuoci per circa 5 minuti, mescolando di tanto in tanto.

Una volta cotto, trasferisci il composto di cipolla e radicchio in una ciotola e lascialo intiepidire.

In un'altra ciotola, unisci la ricotta, il parmigiano grattugiato, l'uovo, il pangrattato, il sale, il pepe e una grattugiata di noce moscata. Mescola fino a ottenere un composto omogeneo.

Aggiungi il composto di radicchio alla miscela di ricotta e mescola bene. Se l'impasto è troppo morbido, aggiungi un po' più di pangrattato.

Preriscalda il forno a 180°C e prepara una teglia rivestendola con carta forno.

Con le mani bagnate, forma delle polpette di circa 3 cm di diametro e posizionale sulla teglia.

Cuoci in forno per 20-25 minuti, girando le polpette a metà cottura per una doratura uniforme.

Sforna e lascia raffreddare leggermente prima di servire.
