Method

Cuocere la zucca a vapore per 18-20 minuti fino a diventare molto tenera. Scolarla bene e lasciarla raffreddare leggermente.

Ungere una piccola pirofila rettangolare (20x16 cm) con olio di cocco.

Frullare la zucca cotta fino a ottenere una purea liscia e omogenea.

In una ciotola, unire il latte di mandorla, le proteine whey, le uova, il miele, la cannella, lo zenzero e la noce moscata. Mescolare bene fino a ottenere una crema senza grumi. Aggiungere la purea di zucca e amalgamare delicatamente.

Disporre le fette di pane integrale in strati alternati nella pirofila, cospargendo l'uvetta sultanina tra i vari strati.

Versare il composto di zucca e proteine in modo uniforme sul pane, lasciandolo assorbire per 15 minuti a temperatura ambiente.

Preriscaldare il forno a 180°C.

Cuocere in forno per 30-35 minuti fino a quando la superficie non risulta leggermente dorata e l'interno rimane cremoso al centro.
