Preriscalda il forno a 180°C.

In una ciotola, mescola lo yogurt greco, l'eritritolo, l'estratto di vaniglia e un pizzico di sale fino a ottenere un composto omogeneo.

Aggiungi le uova e continua a mescolare fino a che non si amalgamano bene.

Incorpora il cocco grattugiato e mescola delicatamente.

Versa il composto in uno stampo da 20 cm di diametro, precedentemente rivestito di carta da forno.

In una teglia più grande, posiziona lo stampo e riempila con acqua calda fino a metà dello stampo (bain-marie).

Cuoci in forno per circa 25 minuti, finché la superficie non è dorata.
