In una padella antiaderente, scalda l'olio d'oliva a fuoco medio e aggiungi la cipolla rossa tritata. Cuoci per circa 5 minuti fino a doratura.

Aggiungi l'aglio, lo zenzero e il peperoncino verde, rosolando per 1 minuto finché non sprigionano il loro profumo.

Unisci i pomodori a cubetti, il cumino, la curcuma, il coriandolo e il sale. Mescola bene per amalgamare le spezie.
