Rosolare la pancetta in una wok o padella antiaderente fino a renderla croccante (circa 5 minuti), trasferire su carta assorbente e tenere da parte, conservando il grasso in padella.

Aggiungere gli scalogni nel grasso di cottura e rosolarli per 1 minuto fino a renderli fraganti, quindi aggiungere il petto di pollo tagliato a dadini e cuocere per 2 minuti fino a doratura, spolverare con 1 cucchiaino di curry.

Creare una piccola cavità al centro, versare l'olio, aggiungere l'uovo intero leggermente battuto e far cuocere mescolando per 1-2 minuti fino a raggiungere la consistenza desiderata.
