In una ciotola versate l'acqua tiepida, aggiungete il malto d'orzo e il lievito di birra: lasciate riposare 5 minuti fino a sciogliere completamente.

Aggiungete la farina integrale e le proteine in polvere già mescolate insieme, quindi il sale marino.

Impastate per 10 minuti fino a ottenere un impasto elastico, omogeneo e leggermente appiccicaticcio (è normale con la farina integrale).

Trasferite in una ciotola unta leggermente d'olio, coprite con un canovaccio umido e fate lievitare in luogo tiepido per 2-2,5 ore fino al raddoppio del volume.

Dividete l'impasto in 8 porzioni uguali di circa 70 g ciascuna; modellatele a palla usando le mani inumidite.

Disponete le palline su una teglia rivestita di carta forno, distanziate di almeno 5 cm.

Coprite con un canovaccio e lasciate riposare 25-30 minuti.

Con l'aiuto di un coltello affilato o di una forbice da cucina, praticate 6-7 tagli superficiali sulla superficie di ogni pallina, creando il classico motivo a rosetta, senza tagliare troppo in profondità.

Lasciate lievitare ancora per 45 minuti in luogo tiepido.

Preriscaldate il forno a 200°C per 15 minuti.

Infornate a 200°C per 22-25 minuti fino a doratura leggera e croccantezza superficiale.

Sfornate e fate raffreddare su una gratella per almeno 10 minuti prima di servire.
