Porta a ebollizione una pentola d'acqua salata e cuoci i piselli per circa 5-7 minuti, quindi scolali e lasciali raffreddare.

In una ciotola, unisci i piselli cotti, gli albumi, il latte di soia, un pizzico di sale e pepe. Frulla fino a ottenere un composto liscio.

Fodera una teglia di 20x30 cm con carta forno e versa il composto di piselli, livellando bene.

Cuoci in forno ventilato a 180°C per circa 15-18 minuti, fino a quando la superficie è dorata.

Lascia raffreddare per qualche minuto, quindi spalmaci sopra la ricotta e distribuisci le fette di prosciutto crudo.
