Preriscaldare il forno a 180°C e rivestire una placca con carta forno.

Grattugiare finemente la scorza di entrambi i limoni, avendo cura di eliminare la parte bianca amara.

In una ciotola, unire la farina integrale, la farina di mandorle, la scorza di limone e il pepe nero macinato, mescolare bene.

Aggiungere le proteine in polvere, il sale e il lievito, mescolando ancora.

Creare una fontanella e versare l'acqua e l'olio di oliva, impastare fino a ottenere un composto omogeneo e leggermente saldo.

Trasferire l'impasto sul piano di lavoro leggermente infarinato e formare un panetto compatto.

Stendere l'impasto con il mattarello fino a 2 mm di spessore.

Con un coppapasta del diametro di 6 cm, ricavare dischi rotondi.

Usando un coppapasta più piccolo (2 cm), rimuovere il centro di ogni disco per dare la forma di ruota.

Cuocere in forno per 14-16 minuti fino a doratura leggera e croccantezza.
