Versare la farina integrale, il burro tagliato a dadini, il sale e l'acqua fredda in una ciotola. Impastare con le mani fino a ottenere un composto omogeneo e compatto.

Formare una palla, avvolgerla in pellicola trasparente e riporre in frigorifero per 20 minuti.

Su un piano leggermente infarinato, stendere l'impasto con un matterello fino a uno spessore di 3 mm, formando un rettangolo di circa 40x25 cm.

Dividere il rettangolo in due fogli uguali di 40x12,5 cm.

Nel primo foglio stendere uniformemente la ricotta magra mescolata con l'albume, gli aromi e il formaggio grattugiato.

Sovrapporre il secondo foglio di pasta sopra la farcia, pressando delicatamente i bordi.

Utilizzando un coltello affilato, tagliare il rettangolo in 24 quadrati di circa 5x5 cm.

Disporre i quadrati su una placca rivestita di carta forno, bucherellarli leggermente con i rebbi di una forchetta.

Condire ogni salatino con pomodori secchi tritati, olive nere tagliate e un pizzico di origano.

Spruzzare con olio extravergine d'oliva spray e cospargere di sale e pepe.

Cuocere in forno preriscaldato a 200°C per 16-18 minuti fino a quando la superficie risulta dorata e croccante.
