Lavare bene i pomodori, togliere il torsolo e tagliarli a grossi pezzi.

In un frullatore potente, aggiungere i pomodori, lo spicchio di aglio sbucciato, il sale e il pepe. Frullare fino a ottenere una crema liscia, circa 1 minuto.

Aggiungere il pangrattato integrale e l'aceto di vino rosso, frullare ancora per 30 secondi fino a ben incorporare.

Trasferire la crema di pomodoro in una ciotola. Versare l'olio extravergine di oliva aggiungendolo lentamente mentre mescoli con una frusta, in modo da emulsionare bene e ottenere una consistenza cremosa.

Affettare il prosciutto di Parma magro in strisce sottili, quindi tagliarli a dadini di piccole dimensioni.

Sgusciare le uova sode, dividerle in albume e tuorlo, e triturare separatamente con una forchetta (l'albume in polverosa granella, il tuorlo in piccoli frammenti).

Versare il salmorejo in ciotole fredde, distribuire in superficie il prosciutto di Parma, l'albume d'uovo e il tuorlo. Completare con un filo d'olio extravergine.

Servire immediatamente ben freddo.
