Tagliare finemente il sedano, l'aglio, la cipolla e il prezzemolo, mantenendo i pezzi piccoli per una cottura uniforme.

Scaldare l'olio in una pentola antiaderente a fuoco medio, aggiungere il soffritto e lasciar rosolare per 2-3 minuti fino a quando diventa profumato.

Aumentare la fiamma, aggiungere le seppie già tagliate e cuocere per 3 minuti, mescolando spesso, per farle perdere l'umidità in eccesso.
