Cuoci il riso integrale in brodo vegetale salato e pepato secondo le indicazioni del produttore (circa 25-30 minuti), scola e trasferisci in una ciotola.

Preriscalda il forno a 180°C. Prepara uno stampo da plumcake spruzzandolo di spray antiaderente.

In una ciotola mescola le uova intere, l'albume, la ricotta setacciata, il Parmigiano Reggiano e il prezzemolo fino a ottenere un composto omogeneo.

Unisci il riso ancora tiepido al composto di uova e ricotta, mescola delicatamente ma bene.

Disponi metà del composto di riso nello stampo, distribuisci sopra il prosciutto crudo tagliato a striscioline, aggiungi il restante composto di riso.

Cuoci a 180°C per 25-30 minuti: i primi 15 minuti a fondo forno, poi sposta a metà altezza per completare la cottura. Lo sformato deve risultare leggermente dorato in superficie.

Lascia intiepidire per 5 minuti, quindi sforza su un piatto da portata e servi a fette.
