Method

In una ciotola mescola 40g di farina di mandorle, 10g di farina d'avena, 5g di proteine in polvere neutre, 1g di lievito e i semi d'anice schiacciati.

In un'altra ciotola sbatti l'uovo intero con 20g di eritritolo e una goccia di estratto di vaniglia fino a ottenere un composto spumoso (3-4 minuti).

Incorpora gradualmente il mix secco al composto uova, mescolando fino a formare un impasto denso.

Stendi l'impasto tra due fogli di carta forno fino a circa 5mm di spessore.

Usando uno stampo springerle, premi con decisione per marcare il disegno, quindi ritaglia con un coltellino.

Disponi su una teglia con carta forno e lascia asciugare 30 minuti. Inforna a 120°C per 12-15 minuti fino a doratura leggera. Raffredda completamente su griglia.
