Mescola in una ciotola farina d'avena integrale, polvere proteica, lievito per dolci e sale marino.

In un'altra ciotola, ammorbidisci il burro a temperatura ambiente e aggiungilo al composto secco insieme alle uova intere e all'estratto di vaniglia.

Impasta gli ingredienti fino a ottenere un composto omogeneo e leggermente appiccicaticcio.

Modella l'impasto in un cilindro di circa 3 cm di diametro, avvolgilo in carta forno e riponi in frigorifero per 2-3 ore fino a che diventi ben sodo.

Preriscalda il forno a 180°C e fodera una placca con carta forno.

Togli l'impasto dal frigorifero, rimuovi la carta forno e affetta il cilindro in dischetti di 0,8 cm circa.

Disponi i biscotti sulla placca con piccola distanza tra loro e cospargili leggermente con zucchero di cocco.

Cuoci in forno per 15-17 minuti fino a quando i bordi risulteranno leggermente dorati.

Sforna e lascia raffreddare completamente su una gratella prima di conservare in contenitore ermetico.
