Method

Portare il brodo vegetale a ebollizione in un pentolino con un pizzico di sale. Aggiungere la quinoa, mescolare bene e ridurre il fuoco al minimo. Coprire e cuocere per circa 15 minuti fino a quando la quinoa avrà assorbito il brodo e i germogli si apriranno. Trasferire in una ciotola grande e lasciar intiepidire per 5 minuti, quindi condire con il succo e la scorza del limone.

Mentre la quinoa cuoce, tagliare i pomodori ciliegini a metà o in quarti e i cetrioli a dadini piccoli. Tritare finemente cipollotto, prezzemolo e menta con un coltello affilato. Aggiungere alla ciotola con la quinoa appena raffreddata.

Schiacciare leggermente l'aglio e aggiungerlo al composto insieme all'olio extravergine, il sale e il pepe. Mescolare delicatamente ma bene per distribuire uniformemente tutti gli ingredienti.

Assaggiare e regolare di sale, pepe e limone secondo il gusto personale. Servire il tabulè freddo o a temperatura ambiente, preferibilmente dopo 30 minuti di riposo in frigorifero per far amalgamare i sapori.
