In una ciotola, sciogliere il lievito di birra nel latte tiepido e lasciare riposare per 10 minuti.

Aggiungere la farina integrale, le proteine in polvere, lo yogurt, l'uovo, l'eritritolo e il sale.

Impastare fino a ottenere un composto omogeneo e morbido.

Coprire la ciotola con un canovaccio e lasciare lievitare in un luogo caldo per circa 1 ora, fino al raddoppio.

Riprendere l'impasto e stenderlo in un rettangolo di 30x20 cm.

Sciogliere il cioccolato fondente e spennellarlo uniformemente su 2/3 dell'impasto.

Ripiegare la parte non ricoperta sull'altra e sigillare bene i bordi.

Ripetere il processo di pieghe per altre due volte, lasciando riposare l'impasto in frigorifero per 15 minuti tra una piega e l'altra.

Tagliare l'impasto in strisce di circa 3 cm e intrecciare ogni striscia.

Disporre le brioche in uno stampo per muffin leggermente unto e lasciare lievitare per un'altra ora.

Preriscaldare il forno a 180°C e cuocere le brioche per circa 25-30 minuti, fino a doratura.

Lasciare raffreddare prima di servire.
