Method

In una ciotola, unisci farina di grano saraceno, farina di riso integrale, acqua tiepida e lievito. Mescola bene fino a ottenere un composto omogeneo, quindi copri e lascia riposare in frigorifero per 12 ore.

Passate le 12 ore, in una ciotola capiente aggiungi il pre-impasto, l'acqua rimanente (se necessaria), la polvere proteica, il sale, i semi di lino macinati e il lievito secco rimasto. Impasta energicamente per 8-10 minuti fino a ottenere un impasto elastico e coesivo.

Incorpora delicatamente i semi di girasole e l'amaranto soffiato nell'impasto con movimenti avvolgenti.

Unta uno stampo a cassetta (22x12 cm) con olio extravergine di oliva e trasferiscivi l'impasto, livellando con le mani umide.

Copri con un canovaccio e lascia lievitare in luogo tiepido (22-24°C) per 45 minuti circa, fino al raddoppio del volume.

Preriscalda il forno a 200°C. Spennella delicatamente la superficie del pane con un mix di miele sciolto in poca acqua tiepida.

Cuoci per 50 minuti a 200°C fino a doratura uniforme. Il pane deve risultare sonoro quando picchiettato sul fondo.

Sforna con cura, trasferisci su una gratella e lascia raffreddare completamente prima di affettare.
