Preriscalda il forno a 160°C. Tosta le noci pecan su una teglia per circa 5 minuti, poi lasciale raffreddare.

Tritale grossolanamente e mescolale in una ciotola con il cacao amaro, il pizzico di sale e la scorza d'arancia.

In un'altra ciotola, monta l'albume fino ad ottenere una consistenza spumosa.

Aggiungi l'eritritolo all'albume montato e continua a montare fino a ottenere una meringa soda.

Incorpora delicatamente la meringa al mix di noci e cacao, mescolando con movimenti dal basso verso l'alto.
