Preriscaldare il forno a 180°C e foderare due tortiere (diametro 24 cm) con carta forno.

Triturare finemente i pistacchi insieme allo zucchero di canna e l'amido di mais fino a ottenere una polvere.

In una ciotola, montare gli albumi a neve ferma con il sale fino a picchi rigidi.

Incorporare delicatamente il composto di pistacchio negli albumi con movimenti dal basso verso l'alto usando una spatola.

Distribuire il composto nelle due tortiere a uno spessore uniforme di circa 1 cm.

Cuocere in forno per 13-15 minuti fino a doratura leggera; la base deve rimanere croccante all'esterno e leggermente morbida dentro.

Togliere dal forno e lasciar raffreddare completamente nelle tortiere, quindi trasferire in congelatore per almeno 30 minuti.
