In una ciotola, mescola la farina di mandorle, la farina d'avena, l'eritritolo e un pizzico di sale.

Aggiungi l'uovo, lo yogurt greco e l'estratto di vaniglia, quindi impasta fino ad ottenere un composto omogeneo.

Lascia riposare l'impasto in frigorifero per 10 minuti.

Nel frattempo, grattugia la scorza di limone e uniscila a 50 g di yogurt greco per la crema.

Stendi l'impasto su un piano infarinato fino a ottenere uno spessore di circa 5 mm.

Fodera una teglia da 18 cm con l'impasto, versando la crema di yogurt al limone sopra.

Copri con un altro strato di impasto, sigillando i bordi.

Cuoci in forno preriscaldato a 180°C per 15 minuti fino a doratura.
