Preriscaldare il forno a 180°C. Ungere leggermente una tortiera a cerniera di diametro 24 cm con olio di cocco e spolverare con farina d'avena.

In una ciotola, sbattere le uova con il miele fino a ottenere un composto chiaro e spumoso (circa 3 minuti).

Aggiungere l'estratto di vaniglia, la scorza di limone e mescolare delicatamente.

In un'altra ciotola, setacciare insieme la farina di mandorle, la farina di farro, le proteine in polvere, il lievito, la cannella e il sale.

Incorporare gli ingredienti secchi al composto di uova con movimenti dolci, senza smontare l'aria.

Aggiungere i dadini di mela e mescolare brevemente fino a distribuirli uniformemente.

Versare l'impasto nella tortiera preparata e livellare la superficie.

Cuocere in forno a 180°C per 30-32 minuti, fino a quando uno stecchino inserito al centro esce pulito.
