Preriscaldare il forno a 180°C e foderate una tortiera da 20 cm con carta da forno.

Tostate leggermente le nocciole in padella per 2-3 minuti a fuoco medio per esaltarne l'aroma, poi tritatele grossolanamente.

In una ciotola, montate gli albumi con lo zucchero di cocco e il sale fino a ottenere una meringa ferma e lucida (circa 3-4 minuti con le fruste elettriche).

Incorporate delicatamente le proteine in polvere, il cacao, la vaniglia e il lievito mescolando dal basso verso l'alto con una spatola.

Aggiungete l'olio di cocco sciolto a temperature ambiente e continuate a mescolare con movimenti dolci.
